Fresh Salad - Radish and Marinated Beetroot

Ingredients 

 

Salad

1 Raw pealed beetroot

1 Large radish or 6 small ones 

1 Red tiger tomato and 1 green tiger tomato

 

4 TS Olive oil

 

Marinade : 

 

2 TS  Raspberry Vinegar 

1 Lime 

 

Method :

 

Slice the beetroot and radish thinly. 

Marinate at least 20 min the beetroot in raspberry vinegar and the radish in the lime juice.  

Slice the tomatoes and keep the juices. 

Mix the salad in olive oil and the tomato juice, assemble the salad and other ingredents in a shallow plate.
